Vegetable Khichuri Khichuri (lentil rice) is a traditional and popular dish in almost every Bengali home. There are many different ways you can make Khichuri. Some make it with different kinds of lentils, some like it runnier/mashed than others and some like it with vegetables, meat or neither. Here we are showing you a simple and quick vegetable khichuri with moshur daal recipe. You can use any vegetables you like or have in your home. Here we used whatever we had in the fridge. You can enjoy this with fried omelette, aubergine and dry chilies with salad on the side or with bhuna mangsho. Voth are traditional ways to enjoy this delicious Bengali Khichuri. Ingredients: 

3 cup Chini Gura Rice (90% cooked and drained) 

1 cup mosur daal (soak in water) 

1/2 cup mustard oil 

1tbsp ghee 

1 medium tomato 

1 cup cucumber (or any veggies) 

1 cup bell peppers 

1 large onion chopped 

1 tbsp ginger paste 

1 tbsp garlic paste 

1 large potato 

1 medium carrot 

Handful of Coriander or Parsley 

Handful of chillies halved 

1 tsp turmeric 

1/2 tsp chili powder 

1 tsp cumin powder 

1.5 tsp salt (adjust to taste)

 4 cardamon pods 

4 cloves 

2 large bay leaves 

2 Cinnamon sticks
